Over the past few years I’ve watched as my sister has expanded her agricultural know-how from the standard tomato into the realm of eggplant, zucchini, corn and other assorted Pennsylvania friendly crops. She’s now growing a surplus of food, and is able to begin plans on starting a cooperative, giving local community members the opportunity to purchase monthly/weekly fresh fruits and veggies grown on their land.
“Not only can she make food grow, she also knows what to do with it once it arrives in the kitchen.”
I have to admit, I do not know all the details on how she comes up with some of her creations. I’ll assume it’s a mix of pure imagination, good taste buds and maybe a little help from the internet. What I do know is that Apricot Zucchini Jam could quite possibly be the most delicious bread topping I’ve ever ingested!
I can’t decide whether to ration myself and enjoy this one, or to up my daily toast intake so I can try the Citrus Marmalade or Lemon Zucchini Jam. Decisions, decisions…
